Sourced from smallholder farms in Buesaco, a traditional coffee-growing municipality in Colombia's Nariño department, where the country's three Andean mountain ranges converge, this natural-processed coffee showcases the region's innovation and resilience. Grown at 2,100 meters, these farms benefit from ideal altitude, fertile volcanic soil, natural water sources, and native forest reserves that support a diverse ecosystem. Only perfectly ripe cherries are selected and floated to remove lower-quality fruit, then fermented for 180-220 hours in tanks and hermetically sealed bags, with careful monitoring of pH, Brix, temperature, and pressure. The coffee is then mechanically dried at controlled temperatures for up to 30 days, resulting in a light roast with notes of black cherry, dried plum, and sweet cream.
